ShoreSahib's Ultimate Seekh Kabab

Minced Sirloin Beef or Goat meat: 2 Pounds

Dried Papaya: 5 slivers

Heavy Cream: Half Cup

Ground Kabuli Chanas: 3 tablespoons

Spice Mixture:

In a coffee grinder, grind the following spices:

Two Tablespoon Dhuniya

One tablespoon Zeera

15 dried Chillies

A small piece of Jaiphal or Nutmeg

A small piece of Dried Ginger called Saunth

Papaya Slivers

After grinding the spices, add the following spices to the spice mixture:

Half tablespoon Good Garam Masala

Sea Salt to taste

Combine all the spices, Minced Meat, Ground Kabuli Channas, Heavy Cream.

Mix really well with your hands

Use Square Seekhs and hold a longish ball of meat in your hands and press the Seekh in it and then make a long kabab enveloping the meat around the Seekh.

Grill on high heat on the barbecue.

When almost done brush with Melted butter, and let brown on the outside.

Enjoy.

Serve with Raita, and Pickled Vegetables.
