Talking of nourishing food likes and dislikes; the driver from upcountry recalled his uncle, in his eighties, who simply used to relish drinking from a big silver ‘’kator’’ of heat melted ghee with equally meltingly bite sized lumps of pure jaggery. By writing the above I do not want you to feel ‘’uggy’’ at the unctuous cuppa. You know one man’s fat is another mans lean;you know Jack spratt and all that! The point to be made here is that we should not label eating habits of others as outright condemnable or downright ‘’harmful’’. Modern medical science opinion about foodstuffs and eating habits is undergoing a change. The once bad boy of Cholesterol fame,the egg has made a comeback, on condition and moderation of course. Once oxidized these fats cause free rad ical damage in our bodies, which has been linked to cancer, heart disease and diabetes.-Vegetable oils are polyunsaturated oils. These are frequently turned into trans-fats. The best fats for cooking are among others-ghee!! and unrefined Organic olive oil(low to medium temperatures only)�.
So in the end,what matters is that any lifestyle, rural or urban if it has to change, it should change to one which promotes, good physical exercise, no smoking and other bad habits, prevention of obesity, keeping free from tension and coping with stress, having lots of anti-oxidants in food(that is fruits and vegetables), and promoting seafood eating culture(fatty fish);for this you will have to join the anti-pollution drive with force, to have a really fresh fish on your plate!).And as for which cooking medium to use? Eye the popular advertisement a little strictly and keep watching current medical news on the internet. Just remember the pro-protein diet folk will run down the other two. But secretly I think a balanced diet is the safest bet,provided the above mentioned healthy life is lived proper.Change sure, but acceptable change
